I haven't really got into all of the things this computer has to offer. All I do know is that it is very responsive, and quiet running.

can this PC be configured to have a second monitor that will allow a different display (versus just a duplicate of the main monitor

Hello. Thanks for your question. Yes, the HP OmniStudio X All-in-One computer can be configured to support a second monitor. It has an HDMI-out port that allows you to connect an additional monitor. Once you have connected the monitor, you can press Windows logo key and P to duplicate your screen. This will duplicate (or mirror) what is on the main monitor. Extend allows you to have two different screens.

I use this type of all-in-one computer in the kitchen. It needs to fit underneath a cabinet. What would be the lowest height possible as the maximum height I have to work with is about 19"??

The HP OmniStudio X All-in-One Desktop Next Gen AI 32-cs0000t PC has a maximum height of 22.26 inches, with an adjustable height range of 100mm or approximately 3.94 inches. The minimum height of the HP OmniStudio X All-in-One Desktop Next Gen AI 32-cs0000t PC will be approximately 18.32". This is without the webcam fully open. You will not be able to use the webcam while underneath the cabinet but everything else should be fine.

Can I replace the 2TB SSD with a 4 or 8TB SSD?

Thank you for your interest in the HP OmniStudio X All-in-One Desktop Next Gen AI 32-cs0000t. That unit is not designed with the internals to be consumer accessible. This unit is configured with a maximum of 2TB for an internal. If you would want more storage, you would want to consider using external drives.
